well done chris!
can i make a suggestion? as well as the oil-pressure guage - get a simple sensor that turns on an oil-pressure light (and make the lamp a different colour to the rev limiter) so in the heat of battle (or during staging) you don't have to watch another guage - you just have to remember to shutdown if the XXX coloured light comes on.
btw - are you running an oil cooler? the factory donut cooler or an external job? maybe something with a thermostat in it so your oil doesn't get too hot/thin.
given that the car is primarily a drag-only car, then you might want to consider draining the oil after each track event and warming it up (new uses for plate-warmers?) to evap out fuel condensate somehow.
i remember reading about a hill-climber (who ran a methanol/SC car) who drained the oil after every meeting and gently bbq'd the drum of oil to boil off the fuel that crept past the rings into the oil
given that yor car will either get hammered or just wait unused for the next track day, the long delays will only allow the petrol to prematurely age/polute the oil.
