The correct thing to do would be to get the system degassed first at any place that services car air con, especially if it still has R12 in it.
Then it's a matter of removing as many bits as you want to. Taking off the condensor will probably involve taking out the radiator and the bumper, disconnecting the hoses, and taking out the condensor. You can then remove the drier (the round can thing), all the hoses, and probably the pump. If you're feeling adventurous enough, you can also remove the evaporator from under the dash. A Gregory's book might be useful to you if you're having trouble working out how various parts come off.
