Personally, the only gauge you really need is Oil Pressure. Water Temp you have the stock gauge (albeit it isn't that accurate, its enough to see if your overheating or not).
Oil pressure gauge actually acts as 2 gauges. Nominal pressure is fairly evvident once the oil has warmed up. If the oil overheats, oilpressure will start to go down. Its as simple as that.
As to where to mount them. Get at 1/8"BPST tee piece adapter from VDO. this will allow you to mount the oil pressure sender where the stock oil pressure switch is.
The Oil temp sender, you can drill out and tap the sump plug. And put it in there.
The Water temp sender is much the same, drill out and tap a hole in the water junction. Or make a nice little adapter piece which fits in the top radiator hose. You can buy the blitz pieces for around $30 (importbitz have em).
