sigh, you young 'uns....
for all out power, carbs can be just as good power (some say better) than an EFI setup. all the engine needs is fuel, and carbs are remarkably good at metering fuel, but usually do so best in a smaller range than EFI.. carbs can also give superior atomisation than EFI..
i don't think that for top end power band, you would find much difference between a well sorted carb setup and well set up ITB EFI.
remember that they have been running carbs for nearly a century, so they still work pretty good .. EFI is just more convenient for tuning, and cheaper to adjust... it also give more flexibility for tuning mid and low throttle more accurately, but carbs sound good, don't go out of tune the way it is being insinuated here, and they are a period look (as well as not being detrimental to power )
