i work with touch screen PC's all day... my thoughts...
rip the old screen out stick a LCD in with resistive touch input for the PC and leave the stock IR touch there and a TV capture card for the original toyota display, run a pc with XP media center edition, 1gb of ram, no swap file, system on a read only compact flash card and your mp3 collection on a mirrored 100gb or so raid setup... should kick ass!
if someone gives me a soarer and a few thousand $$ ill check it out futher
