Nathan, yes, bolts should be done up to their correct torque setting... Otherwise, they aren't too hard to break...

I've done it so many times...

Torque settings can usually be told by markings on the top of the bolts if they are still the original bolts...

And, most bolts for heads, manifolds, rocker covers should always be tightened in correct order... The orders are usually stated in workshop manuals for that specific engine...
