I think you'll find there's been MANY V8's (and other engines!) with carbs and nitrous 
I'd go the EFI personally, especially if you want to go up with the cams a bit - carbs can tend to be terribly thirsty on a done up engine (I realise they don't always HAVE to be - but they seem to nearly always engine up that way!). For smooth running, easy starting and economy, EFI every time.
