I think you'll find there's been MANY V8's (and other engines!) with carbs and nitrous Very Happy

I'd go the EFI personally, especially if you want to go up with the cams a bit - carbs can tend to be terribly thirsty on a done up engine (I realise they don't always HAVE to be - but they seem to nearly always engine up that way!). For smooth running, easy starting and economy, EFI every time.
