engine water temp. How low is too low

Hi guys, I've been having trouble with overheating for a while, had a pressure test and no problems there so next step was the thermostat. Pulled it out and sure enough rated at 88c so clipped the middle out and now sits on about 70c (no more than 80c climbing the toowoomba range, very big hill for people not in the area). I start work at 4:30am so it's quite cold then and temps reach only about 65c. How cold is too cold? If this is ok I will leave it as it is, otherwise i'll get a proper thermostat. The only problem I can see is that the heater is useless a 4:30am at around 10 degrees (cold feet on the way to work).

Try and get a 72deg thermostat for it , without a thermostat in cold weather it takes to long to warm up and 90% of engine wear occurs while the motor is cold .
