in a nut shell... NOT LEGAL
carpet out - does not provide friction in the event that your feet slip off the brake or slips on to accel
door trims and what not - in the event of an accident they prived some relief then actually hitting the metal doors directly
and you can figure the reasoning for the rest

im getrting ym ae86 engineered atm, u can remove most of the trimming, there must be no holes in the fire wall (so that fumes dont get in) the roof lining must be on, plastice trimming on A and B pillers are not required. carpet is not required either as long as the floor has no holes.

You can remove most of the interior legally.
No carpet is fine, doors must have some type of covering so no sharp edges or holes are exposed.
In my yellow ke20 i had alloy door trims & rubber mats glued to the front footwells.

I'd assume taking the rear seat out would be fine assuming ur not stupid enough to try and carry people in there.

There are other cars that came out with no carpet. so I think you could get away with it

if you remove the rear seats it needs to be re-registered as a 2-seater

Bugger! That puts my weight loss plans on the back burner.
At least until I can figure out getting a rollcage in my car and having it engineered.

nark as soon as you put a roll cage in you'll need to be a 2 seater anyway.

horny
that's what I'd do if I had a second car to mod without passenger concerns.
all you need is a mattress on the passenger side and condom dispenser in passenger door

When I got my car engineered last year they put down that it was missing the two back seats and I said no worries... they made it so it was engineered as a 2-seater. I still got the rear seats sitting up in the North Coast if I want to put them in again for any reason, still have the stock mounts and everything, but I just don't carry passengers around in my ride. I say drop the weight elsewhere if you can't drop it yourself!
