Finally got the 1JZ started...BUT???

Guys,
Yesterday I finally got my motor started (thanks to Mos). Got oil pressure after awhile, I have a remote filter block and oil cooler so it took a little longer than expected. Then kicked her over, after about 2 or 3 chuggs and splutters it purred like a kitten. I then let it warm up and gave it a rev to see if the turbos work, yep they sound strong. At this stage Im a happy man. I drove the car about 2km up the road to the exhaust shop, I didnt cane it but it did come on boost hard and strong (although very loud).
I had the standard cressida exhaust welded to the front pipe of the 1JZ just before the cat. The problem started when I picked it up from the exhaust shop. When I started it a funny sound, the closest I can think of is one of those horns at the footy but much quieter, came from the engine bay for a split second while it kicked over. It idled perfectly as before. When I took off and began to accelerate, not too hard, and build boost it stuttered as if it had traction control working and would not let me maintain boost pressure. I dont have the traction control hooked up and I dont even have the control box for it.
So in short, If I give it a rev and back off immediately there is boost. If I maintain the revs at any more than 3500-4000rpm it acts like TC (Fells like the throttle butterfly is fluttering).
The other considerations are that
1. my 600hp internal bosch pump is running constantly on the lower voltage setting for now but should be supplying more than enough flow for a standard motor.
2. Because of the oil cooler I put about 8 litres of oil in the motor. I have a huge ford z9 oil filter, about 2.5 meters of 5/8 hose and a pretty large oil cooler. When the car is not running the oil dipstick shows about 2-3cm above the full mark, when the car is running the dip stick shows about 2cm above the empty.
3. I am not running an intercooler yet and have crossover pipe for now, while my end tanks are being put on my GTR core.
I have checked all pipes, controllers and valves and everything is connected.
Please help me get it running properly. I have put 3-4 month hard work into it and am very distrort that there is a mystery problem at the last minute.

sounds like pretty much the exact same thing that is happening to my 4ag, the only thing i can think of is fuel pressure regulator, let me know if you find out what the problem is dude!
