Hey, I'm just starting to get really into cars and I was just wondering how everybody else on this board learnt about how their car works etc.
I know all the basics but want to learn more, and have plans of one day doing a 3SGTE conversion on my ST184.

taking them apart then trying to put them back together again...
and being in a trade really helps, or having friends in a trade

read forums like these and ask questions
join a car club like toymods and learn off other people in person

the best way is has been said
read the forums and tech articles, but the best way is to get down and dirty and do stuff
when something goes wrong, come on here and workout or ask how to do it, then do it.
Start with small things, then before you know it you will be offered a motor and give it a go and try put it in hehe
Thats what happend to me.
Having someone who has an idea of what they are doing also helps doing things for the first time.

you could try the way I did it.
got a good natural telent for working on things (wood working, mechanical, electrical, etc)
then get yourself the haynes manual. Then join the toymods club.
then start fiddling, working off the manual (which tells you how to replace almost everyhting)
then if something goes wrong come crying to the forums for help

break stuff and hope to christ how it goes back together is the right way
i learn by hands on - or asking sometimes stupid questions that lead to a logical answer ..
Or ask a mate in the know and bug them to show you how things work 90% of the time they will help you - the other 10 they will politely tell you to piss off

buy an old lawnmower run it with no oil till it blows up, pull it apart and fix it (buy, or hire a manual for it) then progress to a motorbike engine, then multiply the cylinders by four and get an old crappy engine to rebuild, something cheap and easy, maybe an old datsun 1200 engine or similar, join a car club and speak to the people who race thier own cars, people who tend to do a lot of thier own work on the side of the road are good people to learn from, eg prb clubmans, rally , or HQ racers are good at diagnostics on the fly and these are the people you will learn from the fastest.

just buy a clapped out old shitter {datto/celica/rona/ect} for like $50 running, and pull it apart bit by bit and see if it'll go back together,
first pull out engine and box and see if it'll go back in, then do suspension, then brakes then pull engine out and strip it, thats how my brother in law did it, he had no choice, he kept fcuking engines in his gemini and he just kept buying whole cars just to get engines, then pulling them apart and selling off bits

Back in the day before internet, I had my old '79 corolla and a few mates that knew some stuff, and we just bodged it along. Stripping carbies, servicing our own cars, etc.
But now I've got a mate that REALLY knows his stuff, (But only tells me what I need to know, which is a good thing, it means I research more myself), I've got a Haynes manual for my car, and the resource of the internet. www.howstuffworks.com is great for if you want to know how an auto box works, planetary gearing, torque converters, etc. They have some other nice stuff there too. It's a good resource for if you don't have a thing but want to know how it works, or, find it's not feasible to strip your engine down to nothing just to see how a particular thing in it works.
But as been mentioned by everyone so far, doing is the best way.

i spent the 1st third of my life in a service station, back when there actually was service stations and not grocery stores selling petrol (didnt learn much rather play leggo).
then the next third of my life in my garage helping my old man pull out auto transmissions (shame id rather go play computer back then, it would have been good to learn how to rebuild an auto)
i only really started to learn a lot when i got my 1st car (the RA40), before this i only learnt little bits here and there.
so in conclusion................ i think i'd like to get a hoist in my garage
