just wondering what the easiest and most powerful engine conversion for a corona would be? bearing in mind i want the car off the road for a minimal amount of time. i was thinking about a 2.5l 6 cylinder twin turbo, but how hard would that be to fit?

Assuming you mean the 1JZ-GTE, forget it. Having witnessed a 1G-GTE conversion, you won't be fitting the larger 1JZ-GTE without fairly serious mods. The 1G conversion isn't too hard, but still no walk in the park.
your best bet would either be a 4AGZE bottom end with a 20V head and a GT2530 turbo with a w-series 5spd, an SR20DET and 5spd, a turbo rotor or if you have a bit of money and want to stick with the toyo theme north-south a 3SGTE with a w-series gearbox for something different. steer clear of the sixes unless you know you physically have the room.
