noticed this weird sloshing/gurgling noise that comes from under the dash (I think) when you accelerate.

any idea what it could be?

coolant level has not changed.

the sound is probably coming from the heater core, I dont think there is half a bottle of water hidden up in there.

im guessing it is something to do with the cooling system.

Sounds like you have air in the cooling system. Put the heater on full heat and give the motor some revs for 30 seconds or so to push the air through then check your radiator and overflow bottle levels.
