Clutch fans and removing them.

Is it possible to remove these things coz they sound like an EA falcon... Can they be replaced with an electronic thermo?

Yes you can remove them (its only 4 bolts usually) and replace them with thermos.
Also you will get a few hp. (is it worth the cost / effort tho?)

its generally a better idea to run clutch fans then thermo's as they do a better job. But if you absolutly have to remove them.. you can get kits and so forth

kits inlcude:
# one 10mm spanner
# instructions to use said spanner
# one thermofan
# four bolts
# wires and relays
# intructions on how to use previously used 10mm spanner with thermofan and bolts
# pictoral instructions of above for those literally challenged
# wiring diagram with pretty colours
# one mallet
# instructions on how to use mallet when it all goes horribly wrong.

I just cannot stand the sound of them...
I know how tempermental the cooling system on a 7M is, so would it be a step backwards going to a thermo?

7M clutch fans are big and move LOTS of air. You simply can't move that volume of air with an electric fan so yes, it would be a step backwards to install one.

Yes but the problem is the fan spins at the same speed as the engine, thus at idle in traffic not much air moves where as thermos spin at full speed when needed
On the ma70 the temp used to go one bar above operating temp with the clutch fan now with the thermos it never go's above half it actualy drops a bar below before the fans switch off!
Not to mention the grunt it sucks out of the engine, i once tryed a 7m-gte fan on an M-EU damn near stalled the engine when it clutched in!

Everyone seems to have their own opinion on this, but I've had nothing but positive experience with clutch fans. The only reason I'm running electric fans now is because I can't find a JZ clutch fan second-hand, and they're way too expensive new. 
If my car was overheating while idling, I'd add a small electric fan as a backup (not a replacement) for the clutch fan.
