If i want to put an Autometer Electric Oil pressure gauge instead of the factory GZE gauge, should i simply be able to disconnect the old gauge and connect the new one to the existing wires, or do you think i'll need to change the oil pressure sender to suit the new gauge??

Yes, you'll need to change the sender as well.

ever so slighty off topic
if i were to put a mechanical oil pressure gauge on a 5m-e...what line would i tap into?
or should i stop being cheap and get an electric one(plus sender unit thingo i'd imagine?)?

Doesn't make any difference in that regard if you get a mechanical or electric gauge - they both have to tap into an oil gallery somewhere!
The easiest way is to get a T-piece and tap into the same place as the factory idiot light sender.

Adding to what Norbie said, just get a 1/8 NPT barb fitting to screw into your existing idiot light sender point, attach a hose to this fitting, fit a t-piece with a barb for the hose and two 1/8 NPT fittings and screw your idiot light in one side and the line to the gauge in the other.
Cheers,
Mitch.

idiot light i'll pay that
um, on the GZE if you get a autometer like i have you will end up with clearance problems with the big brass can that goes in the oil pressure switches place - you will definately need a tee piece, and as mitch put it 1/8 NPT (tapered thread) is what the thing is - your autometer gauge will come with this thread anyways.
a speedflow 911-2 and 917-2 would be the go here. sources recommend not using brass as they are prone to snapping.
