Ok, does anyone know what size sender adapters I need for:
4AGE Water temp,
4AGE Oil pressure.

The 3/8" adapter supplied with the water temp gauge sensor didn't fit (it's about 1mm too wide), so It's a good bet the oil pressure one won't fit either.

So, before I go out and order every size imaginable in 1/8" NPT -> metric, does anyone know what sizes are needed?

The gauges are spitfire, but that shouldn't be relevant, they both have 1/8" NPT sized senders (as most/all gauges of these types).

PS: mounting and wiring was a piece of cake.
PPS: I'd like to at least have the water temp working by the end of the month (sprints).

take you original senders down to pirtec they can match them up for ya, only cost me a few bucks

Can't drive a car with empty cooling system.

According to VDO, all toyotas have:
Water temp sender - M16x1.5
Oil pressure sender - 1/8 NPT

can confirm 100% that the oil sender is 1/8NPT - was the same on my 2T even and on my 4AGE!

be careful with it though - as you may find the sender that goes in the hole is too wide and will foul on the block! my autometer one did so i mounted it elsewhere in my oil cooler plumbing.

not sure on the water one, i had a special made up by meridian motorsport for me...using an alloy speedflow fitting tigged to the original housing (coz the thread was knackered)
