That is my setup. Im not too familar with a setup on a 3S to tell you the truth, but the issue i had was my temp would read normal and in the middle (not overheating) yet if the fans were off just before i turned the car off the coolant would boil.
Solution was to run the thermos all the time, until i get a better idea or a thermo switch.

to my knowledge there is one fan that cuts on and off with the temp, and the other does the same thing but only when the a/c is turned on, mine used to do the same thing but i found out that my radiator was full of shit took it in to get serviced and the cores cleaned and it fixed that problem
cheers nathan
if you find out you need a new radiator i have one for sale

could be the radiator cap venting excess pressure into the overflow bottle - so you can smell the hot fluid from the breather on the bottle, but the bottle keeps the fluid - it should be sucked back into the radiator when the beast cools down.
but ... if it's continually venting excess pressure, or venting at a lower-than-usual tempt, then it's time to:
flush/clean the cooling system
replace the radiator cap

so your temp guage was fine huh?
bizzaro. I had the problem, and it was the wiring for the thermo fans (take the little plug off theback of the thermostat and ground it with the ignition "on".. .the fans should turn on.
and then I found out that my thermostat was opening late and my water pump was leaking.. ahhh but that was all ages ago, and my temp guage was showing me that I was overheating too.. so different problem I guess.
the radiator cap solution sounds like a good one. it would make sense.. boiling without overheating..
that's all I can think of

i would keep a watch on:
quality of coolant (correct colour, no oil pollutants, no floating rusty shit)
radiator is full
overflow bottle at full mark when hot

well if your temp guage is working ok and the car doesn't 'overheat' short trips would be ok I reckon.
So you haven't had the coolant changed recently? (ie, potential air in the system?)
But you need to find out what is doing it. Try a diff radiator cap if the old cap is leaky. To get air out of the system you could always run it with the cap off in the driveway till it gets up to heat and give it the odd rev to try and push the air out... just an idea.. (don't forget to put the heater on "hot" in the car while you do this)
