Ae71 is a great place to start... easy to engineer with 4AG or 4AGZE, etc.
has similar floor pan to AE86, and should handle pretty well with the right suspension.
panels are easy to come by and cheaper than AE86 (how many KE70's do you see around the place!!!!!! billions!!)
and if you wreck it, go buy another one 
AE71 is a great first car choice..
just make sure it has no rust!! rust is what kills cars (as well as trees)

Hey,
I have a AE71. I like it cos suspension is available anywhere, as you can use AE86 suspension. im planning a small port engine conversion soon. and yes, check for rust, i was lucky enough to get one that has no rust, lovely old lady rust proofed it
