if your car is otherwise stock...is it perfectly legal to put a different intercooler onto a car???

As long as there are not chasis or body modifications done. EG cutting the front bar or removing/cutting structual parts to make room. They must not pretrude from undrneath the front bar also.
But then again you could mount it in front of your car and tell the cop its a bullbar

it can actually hang wherever you want to put it as long as its within height restrictions and you can chop anything out of your bumper as long as its not a structural (impact absorbing) part
AND
must have mesh covering the full face of the core
i just had my rolla engineered and a freind had his Nissan Gazelle (SR20DET with JZA70 FMIC) done and thats exactly what we were both told by the best engineer in newcastle

Any cutting of body parts will need an engineer certificate to prove that it does not interfer structurally with the car.
Any copper can pull you over and deem any modified body part including bodykits as structual interference unless you can prove otherwise.
My friends laser is engineered from wheels to engine and has cut some of the standard front bar to fit the frontmount behind it and found himself making another trip to the engineer to clear the defect.

depends if your car is covered by certain ADR's also...
having a pre-ADR car can be good at times 
ask an engineer

the other thing to consider is that it must not interfere with crash sensors for airbag systems..
but something that pretty much writes off its legality straight away changing the airflow pattern invariably changes your emissions. emissions tests arnt exactly easy to pass at least without great tuning

Athol Mullen of Mullen Engineering
he is the best because he knows EVERYTHING! he knows the rule book back to front and can fill u in on all the technicalities and will help you make it all legal
for example his wifes daily drive is a 1990 model camry shell dropped onto a 1960 something toyota crown floorpan with a 350 chev under the hood its 100% legal and the ultimate sleeper hes just saving to put the twin turbos onto it,
technically its a crown so its pre ADR!!!!!!!
like i said hes GOOD
also he has passed cars that other engineers wouldnt cos he actually knows the full limit of the rules and the others if they dont know usually say NO
