Galvanic rust protection (opinions pls)

Just cleaning up my 5S block, and I was wondering if anyone has an opinion on using something like CRC Zinc It (it's a galvanic rust protection spray can) on things like rods, block, pistons etc etc. The engine is probably going to sit around for a couple of months...if I ever get around to painting it (maybe with POR) will the zinc eff it up? Is it worth painting with POR 15 if it has been sprayed with this zinc stuff?

Your really trying to make work for yourself.
If it is all in bits, your best bet is to coat all the smaller parts in oil and put them in an unsealed bag somewhere where it won't get wet. Don't seal the bag as the air will condese on a hot day. If your really concerned, you could chuck in some dessicant to keep the moisture out.
With the block, paint the outside and give the bores a good coat of oil and cover it up.
If you are really concerned, there are some oils available (such as the LPS products) that have corrosion inhibitors in them.

Work is good 
It's just I need to mix'n'match a few things so it pretty much all has to come apart, and I figure I might as well clean the things as I'm going!
As for painting the outside of the block - do you mean just use any old paint, or the zinc stuff?
I've already got some kind of specific engine prep oil for the bores that I will use once I've cleaned them up.

There's a bit of surface rust on the outside of the block, I want the block to look neat (ie uniform colour), so what can I do about the fact that the rest of it is covered by some kind of (I'm guessing) electrolytic process. Obviously I need to sand/wirebrush the rust off...but then what? Is it better just to get the whole block bathed?

Oh - one more question actually 
I was trying to clean out the water jackets with compressed air, and there was a crapload of black flecks (charcoal/carbon) that were blowing out...so I stuck a hose into the water inlet in the block, and started trying to clean it out and the stuff coming out was very dark black/brown water...I'm guessing this engine wasn't in good nick - maybe blown head gasket or cracked head?
I'm guessing it's also possible this could be a problem with the block so I should get it tested right?

not true... how hot do you think a block gets?
any decent enamel paint will do fine.
secondly re: rust protection - use lanogaurd spray. dont bugger about painting rods ffs! 
water jacket scale/corrosion/debris? just keep rinsing and washing. get a fine gun barrel/bore brush in there if it looks totally fuct up. screwdrivers work too.
do you suspect the engine was buggered? get it crack tested if suspicious.

ed is on the money, i have heard people suggesting paint that you use on pot belly stoves and other silicone based extreme temp stuff.
total overkill.
as ed says any decent enamel.

What about the head near the exhaust manifold? How hot would that get on a NA motor? Do ppl paint heads or only the block?
I also want to paint my exhaust headers because they look like shite. I was told that I can certainly try but regardless of the paint it will burn off eventually. Will a NA exhaust get over 600 degrees?

its a lanolin based surface protectant. sticky and oily as shit. used by machine shops and toolmakers etc to protect newly machined parts. works a treat.
its kinda like the sticky oily crap that some car parts come covered in when you fish them out of the factory sealed plastic bag.

Yeah, I agree about painting the head. I've just had it cleaned so it looks very nice. Its the headers that are shitting me. I'm fairly sure the stuff I bought was rated to 600 or 700 degrees so I'll just see how long it lasts. If/when it burns off then I'll try the stuff you sent the link for.

So there's no real need for POR 15 on something like the block? I've always found that high temp enamel tends to chip very easy...
So no one uses any of the zinc stuff to stop rust?
