Its a torque mount. Have you had the mounts urethaned? Ive heard this helps with limiting the movement of the engine. I would assume that they keep coming out due to too much movement of the engine?
Im getting it done to my mr2.
Not sure if this will help but its just a thought.
Also, have you tried putting a split pin in the end of the bolt? Drill a hole in the end of the bolt and after you put the nut on put the split pin in. This will stop you from loosing the nut and bolt. could be a good safety thing anyway until you find exactly whats wrong.

Drill the head of the bolts (they're mild steel so should be easy), get some 0.032" Stainless steel lockwire, a pair of lockwire pliers and lockwire them up a la aircraft style.
Sounds like that's the only way you'll solve your issue.
If you were in Adelaide, I'd even show you how to do it properly. 99% of people have no idea on how to do it so that it actually works

I can only show you haw to do it, as it was part of my trade (airframe fitter in the RAAF), and I don't have any books at home to be able to scan and host them.
One possible option is to go to the local library and see what they have under aircraft maintenance. If that doesn't yield something, I'll see what I can knock up by hand
