would extractors and a 2" system on a otherwise stock 3T T18
be worth the excercise/expense?

yes, but it wont make a huge difference on its own. get a lumpy cam and a better carbie like a down-draught weber and things start to go a bit quicker.

Yes.
Of course get them second hand if you can. As far as I know 2T and 2TG extractors will also fit.

Nope, not if you're looking for noticable power gains. Yes if you're looking to improve the exhaust note!
