ok, maybe a silly question, but will it fit into a mk2 diff?
I'm going to have a strong engine, strong clutch, and strong gearbox... which means next thing to go will be the diff

No, A G-series Mk3 centre will not fit into an F-series Mk2 carrier. I wish it were that easy, but no such luck.
It's possible to swap a G series carrier into a Mk2, but you're looking at a lot of work there (eg custom driveshafts etc).

This has been covered a billion times, do a search. In a nutshell, get an old Hilux rear end, have it modified to fit the Celica, and bolt in a late-model Hilux LSD centre.

Or it would be harder to do?
I know wbout doing the hilux diff, but wondering if this would be cheaper/better/ an option.

Mk3 and Hilux diffs are interchangeable. If you can get this one for a good price, go for it.
