with the oil pressure guage you should be able to use the existing oil pressure light wires to connect it up (you know when you turn the car on and the oil light comes on?)
with the oil temp if the car doesnt come stock with one then you have to drill and thread a part of the block to put a sensor in

Incorrect on both counts.
The oil pressure light switch is just that, a switch - it's not going to provide any useful signal for a gauge. Remove the switch and replace it with the oil pressure sensor - you may need an adapter fitting if the thread is different, but that should be easy to source from Pirtek/Enzed/etc.
If you want to run an oil temp gauge as well there's no need to drill and tap a new hole (this would require pulling the engine apart first, a little excessive just to install a gauge) - you can run a T-piece off the the existing hole and connect both sensors to that. Once again a hydraulic fitting shop will be able to supply what you need, just take them the oil light switch and the sensors for your gauges and they'll work it out from there.

its about inline with the oil filter but towards the front of the car, easier to jack the car up and reach it from underneath

If you can wait a while, I'll have a 1GGTE oil pressure gauge sender. I need a switch one.

Re: does anyone know how to fit oil guages to a gz20?

you could probably run the switch, pressure sender unit AND the temp
I figure if there's a monumental oil leak you'll notice a red light before you look at the oil pressure guage. but i suppose in both cases it'll probably be too late!
