problems after rebuild...3sge

I have recently rebuilt a 3sge in an st162..recon'd the head, bored the cylinders,new water pump, new crank, clutch kit, full gasket kit ofcourse.. everything...now the car in running but have a problem...when I turn it over cold...it revs at 2000, then begins to rev up and down untill it is warm, then settles to the usual 800- 900 revs at Idle.....Also, when I am driving, it losses, and gains speed unpredictably......When i take off in first gear, it doesn't want to really go, I have to thump the eccelerator again....it will usually take off at about 3000 revs unpredictably....

with the idleing problem, it could be the water temp sensor on the outlet to the motor, and the speed changing could also be the same thing, just fixed the same problem in my wagon, it turned out to be a the wires going to the sensor.
