I'll vote for the idle screw in the top of the throttle body being screwed out too far.

Have you got the coolant pipes to the intake connected ? I have heard of someone with same problem as yours, they then found they had a blockage in that area, and i think it went back down.. But then others say you dont need them connected. I will see when I fire my engine up.

When the wax pallete in these things go, what you are experiencing is the common symptom.

I've had this prob more times then you can count on two hands.
First time was when i flushed the system and refilled it i didn't get all the air out of the block.
Second time was of a split hose around the water pump.
Third - loose connection on the water pump.
Fourth - loose bottom hose.
Fifth - Split hose at the throttle body. I used the other hose as a bridge. So much for that idea
I can keep going...
But really its to do with the temp sender thats at the gearbox end of the head. If the coolant level is lower then what the temp sender is, you'll get the hunting idle. OR, if you don't have the coolant going to the TB you'll get the same thing.
