Are they real SU carbs or the jap version of them?
Anyway as for a manifold if redline don't make one then some alloy plate and tube cut and shaped to suit would do.Probably doo it yourself or maybe cut and shut the datsun manifold with an original 4K manifold.Anyone who can weld alloy should be able to take care of the welding.

The original pommy ones are a pain in the arse but the jap copy are'nt to bad and tend to stay in tune.

Jap copy (hitachi from memory) have better tunability due a nicer linkage setup (well on the 240z anyway).
What you should do as well is buy a kit to recondition the SUs since they are probably farken old. Re-kitted SU's are much nicer/easier to tune and stay in tune. Very simple carby but works well - just make sure the oil is OK.
My dad can tune them by ear with a bit of garden hose!

That's balancing the carbs. IE making sure they are both flowing the same amount of air at idle. It doesn't do a whole lot to tune them though really.

Like Josh said, that's just balancing. To tune them, they'll need to go on a dyno with an AF meter, see where they're running lean or rich and try different needles to get as smooth an AF curve throughout the rev range. Major pest. Best bet will be to get someone who tunes Minis (and other British shite) to have a play.
