As im sure most people will suggest, the 4AGE is probably the easiest bet.

Do a search, and find stuff about both my KE70 and WITZL's AE71, for budget 4AG installation ideas. If you've then got more specific questions, ask either of us (or anyone else that's done the same thing)
If you're wanting something REALLY easy with only a little bit more grunt, try a 5/7K.
If you're a bit keener, here's a few other engines to try: 1G, 3S, 2TG (Toyota) CA, SR, FJ (Nissan) 12A, 13B (Mazda) 4G63 (Mitsubishi) - basically, any engine that will physically fit and that has more guts than a 4K.
