Ive got that Jaycar digital thermometer...
Probably no reason why you couldnt use it to read tyre temperature.
Its quite accurate and responds quickly.
You woud probably have to make up somthing to hold the temp probe to press it onto the tyre.
Its a tiny blob of metal (the thermocouple) held by two wires, so it can bend around easily.

i know u can get ones that are like a gun. Point it at the tyre and press the trigger and gives u a temp reading, no idea how accurate it is, but as u are looking at variances more then actual temp as long as it is consistent it won't matter!
I have seen people use it with go-karting to check the tire temps (why i have no idea) tho i couldn't tell u a brand or where to get it

Yeah, Jaycar sell the IR pyrometers. Not bad, but you really want to be measuring the core temp of the tyre (i.e. with a spike below the surface), not the surface temps.
That said, you can get some vague sort of readings with the IR pyros, enough at least to compare between different setups.
