head gasket?
radiator clogged? (it it able to keep control of temps on the highway?)
when you replaced the manifold gasket, did you get all the piping/wiring hooked up the right way?

do a compression test if it reads low on a cylinder or 2 then pour a small ammount of oil down the cylinder and if the compression improves its a head gasket.
Otherwise try flushing the coolant and replacing with toyota red coolant or a coolant that is compatible with toyota motors.
Another thing it could be is that the thermostat is staying shut so it may pay to replace that aswell..
Could also be your ignition timing may be too advanced check to make sure the timing is correct

Thats a test for rings, not for head gasket.
