	well... the mating surfaces of a crown and pinion are prety bloody complex geometry... they are originally ground as a matching set, and as they wear, they become even more matched (for better or worse). 
whilst it is possible to use a non-matching set, chances are that the surfaces will initially have a much higher rate fo wear as the high spots wear of... and they may not wear off evenly maybe?? 
 
matching sets is a good idea.. 
 
as for centres, no problem, as long as the old and new centre are true, then it should be fine.
