eeek, I drained mine today, got 2 liters out of it. I will assume that the dipstick is a bit buggered due to the conversion.... I will play it by ear, any other way to tell if there is enough oil in it?

What did the dipstick say? I would put in 3-4L as that would be the desired amount, you should be OK with that.

The dip stick said it was almost full, but that wasnt entirly on flat ground, also the engine has been installed flat, so the base of the sump is somewhat angled, however as far as I can tell the stick would be on the higher side. I am going to put 3-4 in tomorrow once all the old crap has drained out, I am also replacing the filter, so a little more capacity there.

The dipstick may be a bit wrong due to the rwd configuration, since you're not using the normal sump and such?..
I think what you want is 4 litres in there..
Possibly next time you change your oil, put in 4 litres.. Wait for it to settle down and then mark on the dipstick where the oil has come up to?

Everyone has a different idea, but I'd check the oil level immediately after stopping the motor, not once it has all run back down to the sump. This is the best way to replicate a running motor and ensuring the amount of oil in "transit" plus what is left in the sump for the oil pump to pick up is enough for the motor.
In regards to actual voume in a sump, and the optimal amount, this will really depend on how hot the oil gets and how often the oil is changed. I've seen many a car with no registration of oil on the dipstick, still commuting back and forth, and while this is not optimal, the engine is not being pushed hard enough to heat or evacuate all the oil in the pan, though you only get approximately a Litre when you drain it. Ideally for any form of spirited driving, or extended service intervals, you'd want as much in there as you can safely get.
As for service intervals - as often as you can afford is a good motto. Personally, I don't like pushing oil in daily commuters past 8000Kms - I feel it exacerbates the "old oil" problems that motors develop, and the common fad to let them run to 10 000kms are simply for those people that can't deal with "round numbers". Naturally, all my cars that are actually used for more "spirited pursuits" have their oil changed at a shorter interval - I've even been known to change oil after only 20 minutes, for certain events!
