18rgeu jumpy?

Hi guys,
I have a couple of small problems with my RA40 (18RGEU engine/twin Solexes). This is my first car so bear with me if this stuff is stupid.
First of all it's a bit jumpy when it's idling forward in first. Holding the clutch in a tiny bit smooths it out, but i've never experienced the same thing in other (newer?) cars. I think this might be related to the other things... When i bought it the idle was tuned very high because it needed to be jump started (no battery). After i put the battery in there the engine still took some coaxing to get started (hitting the gas with the starter - i don't have a choke control inside the car). I think this is normal for carbs, but asking just to make sure.
After it got warmed up it was idling around 1600 rpm at the lights, which did not feel right at all. This weekend i opened it up and tweaked around with some of the idle screws on the carbs. I didn't touch the vacuum difference screw because i don't have a tool to measure that. I kinda worked it by ear and eventually got to the point where the four idle mixture screws are about 1.5 turns out, the rear idle screw is most way out and the front idle screw 1 or 2 turns out. That got it wavering around 900 to 1100 rpm idle. So off i went to work this morning, and i had to heel-toe for the first 10 minutes or so to keep it from dying at the lights. But when i came home i had to heel-toe for 30 minutes! Surely it doesn't take that much to warm up the engine?
Given i am a total newbie at this (though i'm here to learn ) i'm not sure what the problem is. First of all the air filters are dome-shaped look almost home-made with chicken wire and sponge. I'd like to replace those with something decent, so if anyone can give me a part number that just bolts on (K&N?) that would be a fantastic. Another possibility is i know the fuel pump was replaced, could it be that's not providing enough pressure now that the tank is lower than it was on the weekend? (It did run well after a 5 minute warm-up on the weekend.) And what about that EFI that's supposed to be on the "E" version of the 18RG? I still can't quite figure out how that's supposed to work alongside carbs. Shouldn't that be helping start the engine cold and giving me extra idle when it drops too low?
Any help would be really great. I know i could go to a mechanic and get it all fixed, but i'd really like to learn how to work on this stuff myself. Hope you all remember what it was like to be new at this
Thanks
