Need tips on panel beat n spray

Hey
just doing up an 77 RA28
it needs some minor panel beating and a full respay job, just wondering if any 1 out there has got a few tips on the prep i can perform to reduce the cost for labour. To use paint stripper or sanders?
the car is now bare, just the shell and motor.

and picture number 20 is a picture of the dash, if any one knows of a dash making service can u please let me know.
