Piggyback ECU's

I've been having a discussion with a few people on the topics of ECU's, and came to the concensus that the factory ECU is a fairly good piece of gear.
We were discussing the virtues of scrapping the factory setup or merely utilising a piggy-back to just correct the factory settings to something that is better suited to the application.
Does anyone know of any good piggy-back ECU's? Also, does anyone have anything to add to this, possibly from personal experience? Thanks.
